Chinese Takeout Chow Mein

Ingredients
2 cloves of garlic
1 inch ginger, finely chopped
Fresh spring onion greens
Fresh spring onion whites
3 Eggs
1 Carrot, Julienne cut
6-7 Beans
1 TBSP Rice Vinegar
Chow Mein Sauce
1 TBSP Cornstarch
1 and half TBSP Sugar
1/2 TSP White Pepper
1/2 TSP Salt or less (Soy Sauce has salt and umami)
1 instant bouillon cube
2 TBSP Light Soy
1 TBSP Dark Soy
1 TBSP Sesame Oil
2 TBSP Mushroom Oyster Sauce (Vegan)
Recipe
Prepare Udon/Flat noodles as per instruction on the cover.
Add all the ingredients of Chow Mein Sauce in 100 ml lukewarm water and keep seperately in a bowl.
Add 4 TBSP Oil in a Wok, add finely chopped garlic, ginger, carrots, beans, spring onion whites, 3 eggs.
Mix and toss vegetables.
Add Noodles to the wok and mix properly.
After tossing in high flame for 1-2 minutes, move everything to one side and add Chow Mein sauce on the other side of the wok without it touching the noodles.
Let it cook for few minutes and the sauce thickens.
Add a rice vinegar/rice wine to the wok and mix everything together.
Garnish noodles with Spring Onion Greens.
